Good delicata doesn't need a glaze, but sesame/soy/chili combo in Chogochujang Sauce is a delicious addition, none-the-less. Makes a great, easy potluck dish.
- 1 (or more) delicata, cored and sliced into ½" "smiles"
- ½ recipe Chogochujang Sauce (aka "Chojang Sauce")
- Preheat oven to 350°.
- Toss delicata w/ a drizzle of oil (safflower or olive oil) and a pinch of salt.
- Add ½ of the Chojang sauce (¼ of the total recipe), tossing to coat.
- Spread on a baking sheet and roast for 10-15 minutes.
- Remove from oven. Move squash back to bowl and toss with remaining chojang.
- Back onto the baking sheet and roast for 10-15 more minutes; until squash is done, but glaze is thickened but not burnt.
Note: The toss-roast-toss-roast again is a little over the top and can probably be skipped. It's just meant to keep the sauce from over thickening and burning.
