Ginger Sesame Green Beans

Easy and delicious. Use light soy sauce to keep the saltiness in check. Recipe originally from Ben Ramsdell.

  • 2–3lb green beans
  • ¼c garlic, grated
  • ¼c ginger, grated
  • ¼c soy sauce (reduced sodium, if possible)
  • ⅛c sesame oil
  • ⅛c neutral oil, like safflower
  1. Preheat oven to 350°.

  2. Combine all ingredients in a large bowl. Toss (tongs help) until beans are even coated with oil/garlic/ginger mixture.

  3. Spread on 1–2 rimmed baking sheets and roast in oven for 15–20 minutes, turning ½ way through.
