Easy and delicious. Use light soy sauce to keep the saltiness in check. Recipe originally from Ben Ramsdell.
- 2–3lb green beans
- ¼c garlic, grated
- ¼c ginger, grated
- ¼c soy sauce (reduced sodium, if possible)
- ⅛c sesame oil
- ⅛c neutral oil, like safflower

Preheat oven to 350°.

Combine all ingredients in a large bowl. Toss (tongs help) until beans are even coated with oil/garlic/ginger mixture.

Spread on 1–2 rimmed baking sheets and roast in oven for 15–20 minutes, turning ½ way through.
