What could be better than super fast, super easy and super delicious? We make this recipe all the time for burritos, tacos or even with sauteed greens over polenta. This recipe works equally well with fresh or frozen peppers.
3 tbsp olive oil
2 medium onions
3 medium sweet peppers (any color)
2 tsp cumin, ground
salt and pepper to taste
1. Trim, peel, halve and slice the onions. Core, seed and slice the peppers.
2. Put oil in large skillet over high heat. Add onions and peppers and cook, stirring frequently, until they are tender and as brown as you like, 5 to 10 minutes.
3. Sprinkle with cumin, salt and pepper, stir and continue cooking for a minute.
