We make this slaw every time we make fish tacos, but it would be perfect for any type of taco or other Latin American styled meal. This slaw not only looks bright and colorful, but – because it doesn’t use mayo – it tastes bright and fresh, too.
1/2 head, medium cabbage
1 medium-large carrot
1/4 medium sweet pepper (any color, optional)
1/4 small onion or 2-3 scallions or 1 small leek
1/4-1/3 bunch cilantro
2 tbsp olive oil
2 tbsp lime juice
salt and pepper to taste
1. Core and shred (or thinly slice) cabbage. Grate carrots. Finely chop the pepper. Peel, core and thinly slice onion. Chop cilantro.
2. Combine veggies with olive oil, lime juice and salt and pepper. Mix well, taste and adjust seasonings.
