Baked Oatmeal

This has been a favorite for years. Quick and easy to prep in the morning; the hardest part is having applesauce thawed and ready to go. Adapted (only slightly) from Simply in Season.1

  • 2 c rolled oats
  • ⅓ c brown sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ⅓ c raisins (or other chopped dried fruit; optional)
  • 3 tbsp chopped walnuts or pecans (optional)
  • 1 c milk
  • ½ c applesauce
  • 2 tbsp oil
  • 1 egg (beaten)
  1. Combine dry ingredients (oats, brown sugar, baking powder, and optional cinnamon, dried fruit and nuts) in a medium bowl. Whisk or mix to combine.

  2. Combine milk, applesauce, oil and beated egg in a separate bowl. (Or combine un-beaten egg and whisk together.)

  3. Combine wet and dry ingredients; stir well and pour into a greased 8×8-inch baking pan. (We use a 9-in cast iron skillet.)

  4. Bake in preheated oven at 350°F for 25 minutes. Serve warm with milk or yogurt.
